We spent several years searching everywhere, including Thailand, for someone to help create the perfect Thai meals for Amy’s customers, but with no success. And then, serendipitously, we found Olarn who is part owner of a Thai restaurant right here in Santa Rosa where our plant is located. Olarn works in Amy’s own Tech department. We immediately asked him to prepare some Thai dishes for us and he did. They were so delicious that we knew our customers would love them. This Red Thai Curry is Amy’s dad’s favorite. It has finely cut organic vegetables; sauteed onions, broccoli, carrots, tofu and delightfully sweet butternut squash swimming in an authentically spiced (but not too hot) smooth coconut milk based curry sauce. Fragrant jasmine rice completes this meal that has no dairy and no wheat, and is absolutely delicious. So enjoy.
Ingredients (vegan): Organic jasmine rice, organic coconut milk, organic butternut squash, organic broccoli, organic tofu (filtered water, organic soybeans, nigari [magnesium chloride, a natural firming agent]), filtered water, organic tamari (water, organic soybeans, salt [wheat free]), organic carrots, expeller pressed high oleic safflower and/or sunflower oil, organic bell peppers, organic green beans, organic sautéed onions (organic onions, organic sunflower oil), organic brown sugar (organic sugar, organic blackstrap molasses), organic cane sugar, organic cornstarch, organic red onions, spices, sea salt, organic jalapeño peppers, organic garlic, paprika, black pepper.
